Sour foods and herbs astringe (gather and hold), contracting and consolidating. They prevent abnormal leakage of body fluids, sweat, urine, and essence. Sour can also generate fluids when there is dryness from heat.

Lemon, lime, vinegar, hawthorn, plum, sour cherry, certain fermented foods, schisandra, Chinese yam.

When to Use

Cautions

Excessive sour worsens liver qi stagnation; people with strong liver yang rising should not take excessive sour. Sour combines well with sweet (the classical combination of sour plum and rock sugar).
